Who We Are

Fermentation
as a Craft

At R!OT, we believe fermentation is a craft worth mastering. We source our green tea from the southern Japanese island of Kyūshū — organic, autumn-harvested leaves picked at the moment of peak depth and character.

We approach brewing the way a chef approaches a tasting menu.

Each flavour is built layer by layer: balancing acidity in the first fermentation, then introducing herbs, fruits, and spices in the second to create something worth savouring. We think about how our kombuchas pair with food — the citrus brightness of pamplemousse and jasmine alongside a fresh goat cheese salad, the earthy depth of maté and hibiscus cutting through a summer mezze spread.

Every other ingredient is selected with the same care as the tea — sourced locally in the Brussels region whenever possible. Seasonal herbs from nearby producers, fresh fruits at their peak, spices from trusted small-scale importers.

We are endlessly drawn to new flavour combinations, to the alchemy of time and temperature, to the satisfaction of a recipe finally perfected. Brewing is not a side project for us; it is an extension of how we cook, eat, and live.

Culture

Our SCOBY cultures — symbiotic colonies of bacteria and yeast — are cultivated in-house, nurtured batch after batch. Each one is fed, tended, and respected as the living organism it is.

Fermentation was once common knowledge. We want to bring it back.

Fermentation is democratic: accessible, affordable, and deeply rewarding. The arrival of ultra-processed foods pushed ancient brewing traditions aside. R!OT is our invitation to rediscover this skill. Not sweet. Not innocent. Alive.

We live and brew a stone's throw from Parc Josaphat in Schaerbeek — one of Brussels' most alive, energetic neighbourhoods. Our kitchen is where curiosity meets discipline.

This is a drink meant for the table, not just the fridge. We think about pairings, about moments, about the specific pleasure of a well-matched flavour at the right time.
